It's good with everything, cheesy melts, eggs, BBQ's, cold meats and sandwiches etc. It also makes a good Christmas present.
Ingredients
2.5 Kg. Tomatoes
1.25 Kg Onions
0.75 Kg raw Sugar
2 granny smith apples grated
1-Tablespoon Curry Powder
1-Tablespoon Salt
chopped fresh ginger
1 small chilli
1 cinnamon stick
1 teaspoon grated nutmeg
0.5-Teaspoon Cayene Pepper (Optional – Spicy)
apple cider vinegar
Method:
Scald and skin tomatoes – cut into pieces. Slice onions and sprinkle over with the salt.
Put tomatoes & onions in pot and almost cover with vinegar, add remaining ingredients.
Boil all together until thick and spreadable consistency. Stir to avoid sticking to pot.
Bottle while hot in sterilised jars.
I often mess with this, by switching spices. Mustard seeds are good, so are cloves. A star anise, whole peppercorns or some coriander seeds. Follow your nose.
